Boise Airport Proposes New Food, Beverage and Retail Options to City Council
New options for food, drinks and retail are on their way to the Boise Airport beginning this fall. The Boise City Council will be asked at a meeting later this month to approve new contracts for airport concessions operators Paradies Lagardère for retail and Delaware North for food and beverage.
Upon approval of the contracts by City Council, all current food, beverage and retail options offered at the Airport will begin to transition to new concepts or be updated. In addition to welcoming national favorites like Starbucks, Protein Bar & Kitchen, Pizza Hut and Wendy’s, local brands like Flying M Coffee, The STIL, Waffle Me Up, Blue Sky Bagels, Form + Function, Turas Flights and Bites by Telaya Wine Co., and a Treefort-branded restaurant will be included in the Airport’s concession program. Bardenay, a proven passenger favorite, will remain and the design will be reimagined.
The local concepts will be carried through into the retail side as well, including regional beer and wines, Idaho Candy Company, Buy Idaho products, and many more local artisans and products. Retail store themes will pay homage to distinctly Idaho staples like the Capital City Market, the Boise Depot and the Sawtooth Mountains to reflect and connect to our region.
Both Paradies Lagardère and Delaware North hold the current contracts for airport concessions. Earlier this year the Airport went through a public solicitation process to seek proposals from qualified firms for food and beverage and retail concessions operations. Multiple responses were evaluated by the diverse evaluation committees before selecting operators for the new 10-year agreements.

If approved by City Council, construction of the new retail shops, restaurants and cafés could begin as early as October 2024. Construction will be phased to ensure adequate concessions for passengers remain available throughout the duration of the project. The Airport plans to hold an open house event later this summer to introduce the public to the new options.
Details of the projects:
- Flexible and self-directed technology options will help expedite service. Passengers can expect mobile ordering, QR code-ordering at table and self-operated kiosks at food and beverage locations. Guests can also order at the counter or from a server.
- Self-checkout, Scan Pay & Go from mobile devices, payment via digital wallets, and a wide range of vending options will be offered on the retail side.
- Additional square footage has been added to the food and beverage program including additional spaces in the food court and a new 400-square foot wine bar and small bites café on Concourse C.
- Breakfast, lunch and dinner will be served at all food concessions.
- The retail kiosks on Concourse B will be converted into smaller grab-and-go offerings from vending machines, which will help alleviate passenger congestion in the area. Multiple other vending opportunities will be added at key points throughout the terminal to expand food options.
- The largest retail shop will include “store within a store” concepts such as Banana Ink, Herschel Supply Co., and No Boundaries, a store concept that carries brands like Cotopaxi and KÜHL.
